Rich, garlicky, and comforting — this creamy beef and mushroom skillet is the kind of dinner that tastes like it took hours but comes together in one pan in under 30 minutes. No pasta, no rice, just tender beef, savory mushrooms, and a velvety garlic cream sauce.
Why This Recipe Works
Browning the beef first builds a deep, savory base, while the mushrooms soak up all that flavor as they cook down. A splash of cream and a generous amount of garlic turn the pan drippings into a rich sauce that clings to every bite — no thickeners or carbs needed.
Ingredients
- 1 lb (450g) beef sirloin or stew beef, thinly sliced
- 2 cups mushrooms, sliced (cremini or button)
- 1 small onion, diced
- 5 garlic cloves, minced
- 3/4 cup heavy cream
- 1/2 cup beef broth
- 1/2 cup grated parmesan cheese
- 1 tsp Dijon mustard
- 1 tsp smoked paprika
- 1/2 tsp dried thyme
- Salt and black pepper to taste
- 2 tbsp olive oil, divided
- Fresh parsley, chopped, for garnish
Instructions
1. Sear the Beef
Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Season the beef with salt and pepper, then sear in batches until browned on all sides, about 2–3 minutes per batch. Remove and set aside — it doesn’t need to be fully cooked through yet.
2. Cook the Mushrooms and Onion
In the same skillet, add the remaining olive oil. Add the mushrooms and onion, cooking until softened and lightly golden, about 5–6 minutes. Stir in the garlic and cook for another 30 seconds until fragrant.
3. Build the Sauce
Pour in the beef broth, scraping up any browned bits from the bottom of the pan. Stir in the heavy cream, Dijon mustard, smoked paprika, and thyme. Let it simmer for 3–4 minutes until slightly thickened.
4. Combine and Finish
Return the beef to the skillet along with any juices. Stir in the parmesan cheese and let everything simmer together for 2–3 minutes, until the beef is cooked through and the sauce is creamy and coats the back of a spoon. Season with salt and pepper to taste.
5. Serve
Garnish with fresh parsley and serve hot, straight from the skillet.
Tips for the Best Results
- Don’t overcrowd the pan when searing the beef — work in batches so it browns instead of steaming.
- Slice the beef thin and against the grain for the most tender bite.
- Adjust the sauce thickness by simmering a bit longer for a thicker sauce, or adding a splash more broth if it reduces too much.
- For extra depth, deglaze the pan with a splash of broth right after searing the beef to capture all the flavor.
What to Serve Alongside
Serve over cauliflower mash, zucchini noodles, or steamed green beans to keep the meal fully low-carb. A simple side salad also works well to balance out the richness.
Storage
Store leftovers in an airtight container in the fridge for up to 3 days. Reheat gently on the stovetop with a splash of broth or cream to bring the sauce back together.
