Some dinners just work, every single time — and this is one of them. Juicy, herb-marinated chicken roasted alongside caramelized vegetables, all brightened with fresh lemon. It’s simple enough for a weeknight but pretty enough to serve when company’s coming over.

Why This Recipe Works

The lemon and herb marinade does double duty: it tenderizes the chicken while it sits, and it seasons the vegetables as everything roasts together on one pan. Less cleanup, more flavor, and a dinner that practically cooks itself.

Ingredients

For the chicken:

Instructions

1. Marinate the Chicken

In a large bowl, whisk together the olive oil, lemon juice, lemon zest, garlic, rosemary, and thyme. Season with salt and pepper. Add the chicken and turn to coat well. Cover and let marinate for at least 30 minutes at room temperature, or up to overnight in the fridge for deeper flavor.

2. Prep the Vegetables

Preheat the oven to 200°C (400°F). Toss the carrots, red onion, potatoes, zucchini, and bell pepper with olive oil, salt, pepper, and oregano on a large sheet pan or roasting dish.

3. Arrange and Roast

Nestle the marinated chicken thighs skin-side up among the vegetables. Tuck the lemon slices in around the pan. Roast for 35–45 minutes, until the chicken is golden and cooked through (internal temperature of 74°C/165°F) and the vegetables are tender and lightly caramelized at the edges.

4. Rest and Serve

Let the chicken rest for 5 minutes before serving. Scatter fresh parsley over the top and serve everything straight from the pan.
